I was half-craving Arby’s today and saw one I could go through while I was on I-5 heading home. I was all prepared to go through, order 2 Jr. Roast Beef sandwiches to dissect and remove the beef when I saw that they only served Pepsi products. As a Coke drinker, this is blasphemy and besides… Pepsi tastes like chemicals!!!

I was feeling all good about myself for feeling mindful of my eating and not wasting food until I ended up at Carl’s Jr. for dinner… and ended up dissecting the lettuce wrap they made me because I hate lettuce and could not stomach the thought of using it as a bun. Yeah Jen… way to not waste food!

Anyway, my adventures in *NOT* eating gluten have made me aware of what I *could* be eating on the road and why I should be avoiding it. Now to put it into practice…

31 Days of Gluten-Free Life

One of the serious cravings I am having at the moment is for bread. It’s funny because I normally don’t eat much of it but I think the fact that I can’t have it is making me want it more. It’s severe enough that I almost mugged my mom for her sandwich yesterday!

The bread products I am missing are…

sourdough bread
potato bread
tortillas
buns (for fast food)

I head home from northern California tomorrow and I’m trying to come up with ideas for fast food on the road that don’t involve bread. Easier said than done!

Greater Church of Lucifer opening. A friend put this on her wall and commented on the nature of them calling themselves a “church”. I’m truthfully more amused by the $25 catered luncheon. Apparently, Satanists now have the sensibilities of Episcopal church women or something. I would have expected alcohol and debauchery for them, not a catered affair.

Travel. Daniel has a long weekend so he and I are road-tripping to San Jose from Friday to Monday. I’d love prayers for good traveling mercies on our way if you are so inclined.

Update on Kim Davis/Pope Francis. I think I called it. It’s a pity when people play stupid games like this.

Speaking of stupid… I actually had someone cite this study to me. The scary thing: I could have refuted the SafeMinds people as a sophomore taking high school chemistry.

In case you missed it… At the neurology appointment on Monday, we found out that Daniel’s autism is genetic (he has some duplications in genes on a couple of chromosomes and a deletion in a gene on another one) which means that I can actually tell people that his autism is *NOT* due to us immunizing him for MMR and that their argument is invalid.

That’s it for this week — I’m a bit distracted and have also run out of things to say!

31 Days of Gluten-Free Life

I’m headed to visit my parents with Daniel tomorrow and of course I’m having to deal with road food. I thought I’d talk about what I do for today’s post.

-KIND bars: I love them and many varieties are gluten-free.
-Leftovers: I have plans to take some pesto quinoa with me (if I can remember to make it).
-Fruit: Good for me and not greasy which is always a plus while driving.
-Coffee: Thankfully, my normal latté order is gluten-free!

Pray for me as I drive — I have some things to ponder and pray over so I’ll be appreciating your prayers for a safe drive to and from.

31 Days of Gluten-Free Life: Eating Out

So you’ve got a babysitter for the kid(s) and you’ve got a date night scheduled with your spouse. You’re avoiding gluten which rules out a number of restaurants. So where do you eat???

Chipotle works pretty well and as they make it in front of you, you can specify what you want/don’t want. I like their burrito bowls and their soft tacos made with corn tortillas.

Some pizzerias like Pieology and Pie St. (a local independent pizzeria in the Village) have gluten-free crusts. If this is the case, enjoy your pizza the way you like it and the way that isn’t going to trigger massive stomach aches.

In-N-Out and Carl’s Jr. both offer lettuce wraps in place of buns on your burger if you specify it. Just ask for “Protein Style” at In-N-Out and specify it when you order at Carl’s Jr.

As for me, it’s bedtime!
